Your Guide to the Perfect Peanut Butter Cookie

It seems that holidays, special events, and get-togethers often turn into baking feasts—breads, pies, cakes, and cookies. Unfortunately, many people are allergic to flour or are restricted to gluten-free diets. For these folks, all the baking that surrounds them can be quite tortuous. Here is where this recipe for the perfect peanut butter cookie can come to the rescue!

Even if you do not have any food allergies, this is an extremely simple and delicious recipe using only five ingredients. It’s so easy that your kids can help without any huge messes! Whether you are preparing for a cookie exchange or simply filling your home with tasty treats, this peanut butter cookie will definitely not disappoint.

  • 1 Cup Creamy Peanut Butter (All Natural is healthiest!)
  • 1 Cup Confectioner’s Sugar
  • 1 Tsp Vanilla Extract
  • 1 Tsp Baking Soda
  • 1 Egg

Whisk together the confectioner’s sugar and baking soda. In a smaller bowl, whisk the egg and add the vanilla extract. Pour egg mixture into sugar and stir until blended. Add in peanut butter and continue stirring until well blended. Batter should be sticky.

Pull out sections of batter and roll into golf-ball-sized balls. Place on greased cookie sheet, and bake in a 350 degree oven for 8–10 minutes. Cookies will be ready when still soft but not falling apart when lifted.

As you take these off the cookie sheet and onto a cooling rack, slightly press down on the top to form a flatter peanut butter cookie. Serve warm and enjoy!
